Nurungji is typically made by boiling rice in water until it’s cooked and then leaving it undisturbed until its crispy, pretty similar to the Persian Tahdig which is very popular specially the Tahchin version, then adding mung beans and other ingredients. It’s served with dipping sauce like soy sauce or vinegar on top. You can also use hot pepper paste (gochujang) if you like spicy food.

- In a little pot, combine white rice and water (make sure the pot has a lid).
- Stir in the boiling mixture and stew over prescribed intensity until the water evaporates and the outer layer of rice rises (about 10-12 mins).
- After 4 additional minutes, switch heat off and cover the rice.
- For another 5-10 minutes, leave the covered pot undisturbed.
- Enjoy your Nurungji
- Heat the oil in a large pot over medium heat, then add the garlic and ginger and cook for about 1 minutes.
- Add the green onions, carrots, potatoes and mushrooms and cook for another 5 minutes.
- Add the water and bring to a boil over high heat; reduce to low and simmer until vegetables are tender (about 20-25 minutes).
- Remove from heat; stir in soy sauce, vinegar and sesame oil.
